Covert Farms is a 650-acre, four-generations, family-owned organic farm and winery estate located just north of Oliver.
The Amicitia sparkling Zin (a rare grape to use for bubbly) is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled and left to ferment with no intervention. It is unfiltered and topped with a crown cap.
It's a cloudy wine, pretty peachy-blush with rose gold glints and notes of clementines, strawberries, honey and tealeaf. It's lively and honest, crisp and punchy, A good example of this style of wine; it's clean, with a mouthwatering finish.

This sparkling Zin (a rare grape to use for bubbly) is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled, and left to ferment with no intervention. It is unfiltered and topped with a crown cap.
As one would expect, it's a cloudy wine that's a pretty peachy-blush with rose gold glints. It expresses tangy notes of rhubarb and charred orange peel alongside tart red berries, vanilla and star anise. It has a delicate fizz and clean palate with vague flavours of melon, red berries and peach. A fresh and jubilant bubbly.

Snappy, fizzy, dry.

Covert Farms is a 650-acre, four-generations, family-owned organic and regeneratively farmed farm and winery estate located just north of Oliver.
This sparkling Zin (a rare grape to use for bubbly) is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled, and left to ferment with no intervention. It is unfiltered and topped with a crown cap.
As one would expect, it's a cloudy wine that's the palest salmony pink. Aromas of orange pekoe tea and tobacco, tart red berries, peach fuzz and hops lead to a zesty palate. It's bone dry, fizzy and not shy with acidity. Flavours of tealeaf and bitter orange stain the palate. Overall bright with a rustic character and tart snappy finish.

Donnafugata 'Anthilia', Sicily Italy

Unique, restrained, pristine.
Composed primarily of the indigenous white Sicilian variety, Catarratto, the Anthilia is a fantastic food wine for fish, appetizers or a simple pasta e olio.
It is a restrained amalgamation of mineral, stone fruits, golden apples and dried honeysuckle with bright citrus undertones. It has a zingy vibrancy, pristine fruit expression and impressive weight. The finish is long and pithy and it has a phenolic texture to add substance.

Composed primarily of the indigenous white Sicilian variety, Catarratto, the Anthilia is a fantastic food wine for fish, appetizers or a simple pasta e olio.
The aromas here are subtle and integrated - fresh minerality, honey and lemon with fine floral notes. It is oily on the palate and is weighted with mineral, citrus and vague flavours of spice and caramel. It's also a textural wine with a lengthy finish.
