Pleasing, approachable, juicy.
Gray Monk makes this Brut Rose in the traditional method (like Champagne) from the grape varieties Gamay, Pinot Noir and Pinot Meunier.
Fizzy red berries, orange peel, toasted hazelnut, cedar, peach brioche aromas lead to a fresh and lively palate with racy acidity but also a creamy weight and texture. It's a lovely bubbly, salmony-pink, juicy and wonderfully approachable.
It's off-dry and will pair nicely with salmon, soft and mild cheeses, turkey, mildly spicy dishes or most appetizers.

Grilled lemon and wet stone, hay and wildflowers, honey and yellow plum aromas, lead to a palate that is dry with nice complexity. It has a snappy, crunchy palate and long leesy finish. Nice classic styling.

Festive, expressive, juicy.
Gray Monk makes this Brut from Pinot Blamc, Riesling and Chardonnay. Sweet golden pears and honey, yellow plums and talc with nutty and leesy undertones, it is just off-dry and has candied citrus peel and tree fruit flavours. Expect festive bubbles, a bright character and creamy edge. A lively sparkling for the holidays or any day of the year.
Pair: salmon, soft and mild cheeses, turkey, mildly spicy dishes or most appetizers.

Ripe, honeyed, sipper.
One of the varieties Gray Monk lent to a young wine industry in BC, the Pinot Auxxerois is a great patio sipper or partner to fish, appetizers and salads.
Aromas of warm pear compote, honey, exotic citrus and stone fruits lead to a savoury and ripe palate with a honeyed kiss of sweetness. Straightforward with nice freshness, overall.
Pairs Great with Gone Crackers Roasted Shallot & Herb

Refreshing, consistent, zesty. The Heiss family was the first to plant Pinot Gris in Canada and it continues to be a signature wine for that winery, now owned by Andrew Peller. In fact, the name of this 30-year-old winery comes from the Austrian and Hungarian name for the variety, Grauar Monch, which translates to Gray Monk.
Expect honeysuckle and a fruit-cup of peach jellies, warm pears, yellow apples and grapefruit. It's an orchard in a glass with its fruity, citrus palate. Off-dry and supple on the tongue it has a lively zesty finish.
Pair: toasted chicken salad sandwich, spicy crab cakes, coconut curry, mushroom ravioli or grilled white fish.

Out of the glass, it delivers Asian pears, honey, pink grapefruit, smoke and orange blossom aromas. Tangy and refreshing yet fleshy and concentrated, it is a consistently tasty white with a long zesty finish.
Pair: toasted chicken salad sandwich, spicy crab cakes, coconut curry, mushroom ravioli or grilled white fish.
