Supple, complex, complete.
While Black Hills has been growing Cabernet Sauvignon since they were established, this is the first single-varietal version, which came out of a fantastic vintage. A single vineyard estate wine, aged 24 months in barrel and then aged an additional year in bottle, there are a mere 23 cases made, which will be doled out to wine club members (and a few media).
In all honesty, I reviewed this wine before I knew its story, or lofty price, and it wowed me.
Classic Cabernet character, it leads with sweet black currents and graphite, fresh churned earth and fine spices. bittersweet cocoa and tobacco leaf. It treads that marvellous line between savoury and sweet; wild berries, saddle leather, and spice mimic the nose, but it is the structure, weight, complexity and balance, which make you truly take note. The tannins are sweet and supple, the finish lengthy. It really is a complete wine, the whole package.
No 2015 was produced, but watch for this single varietal wine to reappear in fantastic vintages.
