Covert Farms is a 650-acre, four-generations, family-owned organic farm and winery estate located just north of Oliver.
This sparkling Zin (a rare grape to use for bubbly) is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled, and left to ferment with no intervention. It is unfiltered and topped with a crown cap.
As one would expect, it's a cloudy wine that's the palest dusty pink. Aromas of sour cherry, pink grapefruit peel, yogurt, bitter orange, nettle and tealeaf lead to a fizzy palate with plenty of citrus peel, crushed stones and crab apple flavours. Tart, a bit hot, and straightforward; it's a dry sparkling for light summer meals.
