Tangy, zesty, slick.
From the Golden Mile Bench, this pale peachy sophmore edition Wild Ferment is a blend of Cabernet Franc (60%), Syrah (25%), Malbec (15%) and Syrah that was made with minimal intervention.
Using 100% wild yeast, it was fermented in a combination of stainless steel (70%) and neutral French oak (30%). Bitter orange and rhubarb aromas mingle with currents and warm honey, charred cedar and a dollop of yogurt. Similar bitter orange and tangy red fruit dominate the palate layered with flavours of charred spice and burnt honey. Fresh and zesty with a slick texture, this is a rose to pair with grilled fish, smoked tofu and noodles, or chicken salad. ©copyright 2021 Daenna Van Mulligen
