Covert Farms is a 650-acre, four-generations, family-owned organic farm and winery estate located just north of Oliver.
This sparkling Pinot Noir is made in a natural method (method ancestrale), whereby it is put through natural fermentation, bottled, and left to ferment with no intervention. Expect it to be cloudy and have remaining lees as it's unfiltered, then topped with a crown cap.
It's a cloudy peachy-blush and suggests leesy/bread dough aromas woven with tart red berries, green figs, anise, star fruit, tangerine and honey aromas. Dry, tangy and juicy it tastes of green fruits and orange pekoe tea. Overall, a fresh and satisfying natural wine.
