Pleasing, generous, juicy.
A boutique winery located in the famed Coonawarra, in the Limestone Coast Wine Zone of South Australia, Hollick produces wines only from estate-grown fruit. Coonawarra is recognized as one of Australia's finest wine regions and is particularly known for Cabernet Sauvignon, which responds exceptionally well in its red terra rossa soils over limestone. Pure underground water and a long cool ripening season for the grapes produce wines of elegance and longevity.
The Bard displays juicy mulberry and cassis, eucalyptus, cola spices and faint notes of leather and graphite. It has a supple weight and generous purple berries and spice flavours. Wonderful levity having a few years under its belt - a wine that is all in check and a pleasure to drink.

The Bard label is a nod to a lyric poet that lived on the Hollick estate in a cottage. This boutique winery, established in 1983, is located in the famed Coonawarra, in the Limestone Coast Wine Zone of South Australia, Hollick produces wines only from estate-grown fruit. Coonawarra is recognized as one of Australia's finest wine regions and is particularly known for Cabernet Sauvignon, which responds exceptionally well in its red terra rossa soils over limestone. Pure underground water and a long cool ripening season for the grapes produce wines of elegance and longevity.
The Chardonnay shows toasted hazelnut and pineapple, yellow apples, vanilla, honey and grilled lemon aromas. It has a toasty palate that is fresh and zesty; yellow fruit and spice flavours dominate. It has a lively finish.

This old vines Cab shows distinct aromas: green olives in brine and tomato leaf, black currents and damson plum, peppercorns, boxwood and brown spices with undertone of iron and band-aid.
It has texture and notably savoury flavours--molasses and salted licorice, coffee, dark chocolate and wild berries. Good suppleness here and oodles of acidity to keep it fresh.
Pairs great with Gone Crackers Canadian Chedder & Chive

This old vines Cab shows green olives and mulberry, fleur de sel and red currents, eucalyptus and dark chocolate on the nose. It has a supple salty and savoury palate, with mint and roasted bell peppers, tobacco, earth and spice flavours.
Pairs great with Gone Crackers Canadian Chedder & Chive

Coonawarra is recognized as one of Australia's finest wine regions and is particularly known for Cabernet Sauvignon, which responds exceptionally well in its red terra rossa soils over limestone. Pure underground water and a long cool ripening season for the grapes produce wines of elegance and longevity.
This wine is made from estate Wrattonbully Shiraz; the vineyard was planted in 1998 and boasts similar shallow terra rossa soils over limestone to Coonawarra, but is marginally warmer resulting in slightly earlier ripening.
Scented with grilled plums and blackberry it also suggests licorice root and tar, charred herbs, toasted peppery spices and dark chocolate. The palate also has a rich chocolaty character along with toasted spice and espresso. A savoury wine with notable acidity and a long oak-laden finish.
